Easy Lemon Pound Cake


Lemon Pound Cake

This is a very quick cake to make and taste is wonderful lemon! Taking only one hour to bake, maybe ten minutes to mix everything up, you can whip this up when the kids are doing their homework, or while your special TV show is on!


You will need:


1 pkg (8 oz) soft cream cheese

4 eggs

1 pkg yellow cake mix

3/4 cup milk

2 tbs grated lemon peel


Preheat the oven to 350 degrees. Grease well and flour a 9" tube pan. In a large bowl, at medium speed, beat the cream cheese until light and fluffy. Add eggs one at a time, beat well after each.


At low speed, beat in cake mix (in three additions) alternately with the milk, beginning and ending with cake mix. Beat until just blended. Blend in lemon peel.


Turn out into prepared pan, bake for 55 minutes or until tester inserted comes out clean. Let stand in the pan for fifteen minutes, turn out and cool completely. This is good with sifted confectioner's sugar over the top, or a lemon glaze drizzled on the tube cake.


Store, wrapped in foil, in the refrigerator. This cake is actually better the second day.
