Creamy Bacon Potato Soup

One of my favorite things is this hot, creamy potato soup with that dynamite flavor of crisp, hot,savory bacon bits sprinkled over the potato soup! This is one of the best soups! Easy to prepare, you will find there are rarely leftovers. Better double this recipe!

The Best Potato Soup Ever

You will need:

4 slices bacon, cut up 3 medium potatoes, peeled and chopped 1 large onion, chopped 1 carrot, thinly chopped (optional) 1 stalk celery, finely chopped 4 cups milk 2 tsp salt 1/4 tsp pepper 1 cup dairy sour cream 2 tbls flour 2 tsp paprika

In a large saucepan cook bacon till crisp. Drain bacon, reserving 3 tbls drippings in pan. Set aside.

Add chopped potatoes, onion, carrot, and celery to bacon drippings. Cover and cook over low heat about 20 minutes or till potatoes are tender, stirring once in a while. Stir in the milk, salt, and pepper, bring mixture to boiling.


Stir together sour cream, flour and paprika; gradually stir about 1 cup of the hot mixture into sour cream mixture. Return to the remaining hot mixture in the saucepan. Cook and stir just till mixture bubbles. Be sure to not scorch this. Stir and keep an eye on it. Don't leave the stove!


Top with the bacon bits and serve with crusty, hot french bread. This makes about six servings. If you want this as a main dish, double the recipe.
