The Colonel's Cole Slaw (replicated)


This comes from "Top Secret Recipes" by Todd Wilbur, 1993. This comes very close to the real thing! Be sure to refrigerate this for at least a couple of hours prior to serving.

You will need:

8 cups very finely shredded cabbage ( 1 head)
1/4 cup shredded carrots (one medium)
1/2 cup white vinegar
1/2 tsp salt
1/8 tsp pepper
1/4 cup milk
1/2 cup mayonnaise
1/4 cup buttermilk
1/2 tbls white vinegar
2 1/2 tbls lemon juice


Chop the carrot and cabbage into very fine pieces (the size of rice kernels). Combine the sugar, salt, pepper, milk, mayonnaise, buttermilk, vinegar and lemon juice; beat until smooth. Add the cabbage and carrot and mix well. Cover and refrigerate at least 2 hours before serving, ideally overnight.
