Crunchy Lemon Squares
You will need:
1 cup of quick oatmeal
1 cup of flour
1/2 cup shredded coconut
1/2 chopped pecans
1/2 cup brown sugar
1 tsp baking powder
1/2 cup melted margarine
1 can Eagle brand condensed milk
1/2 cup Real lemon juice
1 tbsp grated lemon rind
Heat the oven to 350 degrees.
Combine the oats, flour, coconut, nuts, sugar, baking powder and margarine into a loose mixture and pat half of the crumb mixture into a 9x9 baking pan.
Stir together in another bowl, the milk, lemon juice, and lemon rind. Pour this mixture over the flour/nuts mixture in the baking pan. Put the rest of the crumb mixture over all.
Bake for 25-30 minutes. Cool and cut into squares.
